Apprenticeship in Catering Food Preparation and Cooking

Whatever you might have seen on TV, a career in catering isn't about "Hell's Kitchen". The catering sector is, in fact, about customer service, teamwork, practical kitchen skills, food hygiene and personal flair.

 This course focuses on these skills and:

  • Preparing and cooking meat, poultry, fish, vegetables and soups.
  • Creating and preparing sauces.
  • Creating and cooking pastry and dough products.

Entry Requirements:

You are required to have an NVQ L1 in a similar subject /or be educated up to GCSE standard. (A diagnostic test will be taken by every student)

You will need to be able to work independently in both practical and theory areas of study.

You need a smart appearance, pleasant personality, good communication skills, be able to work independently and as part of a team.

You need to be able to think laterally, have good manual dexterity and the ability to use your own initiative would also be preferable.

Assessment

By continual on-going practical assessment throughout the course when in college and in the workplace. Theory is assessed by end of unit short answer written tests that are set by the awarding body.  Both practical assessments and written tests need to be completed for each unit before it is put forward for verification.


You will need to purchase chef's whites and suitable safety shoes (not trainers) if your uniform from work is not suitable. Knife set (approx £60) if you do not have your own. All other materials and requirements will be explained at interview.

Progression

You can progress onto NVQ L3 in Pastry, Food Prep and Cooking or Restaurant Supervisors in either full or part-time study.
